Zucchini pizza is a deliciously different, crustless pizza that is easy to make. Prepared in one skillet, it is a delicious version of an old favorite. It is a great way to use the large quantities of zucchini from the garden.
1-1/2 pounds lean ground beef
2 cups zucchini, diced
12 ounces mozzerella
cheese, shredded
1/2 cup diced green pepper
3/4 cup fresh mushrooms,
sliced
1 cup pizza sauce
1 tablespoon fennel seed
1/4 cup chopped onion
salt and pepper to
taste
Brown ground beef in skillet until no longer pink; drain. Add fennel seed, salt and pepper, onion, zucchini, and green pepper. Cook over medium heat until vegetables start to become soft. Stir in pizza sauce. Top with shredded mozzarella cheese and mushrooms. Cover and continue cooking until cheese is bubbly and mushrooms are cooked. Additional favorite pizza toppings can be added.
